&lt;p&gt;Servings: 1&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Ingredients&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;2 eggs&lt;/p&gt;
&lt;p&gt;1 ripe medium banana&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Optional ingredients I added&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1 tbsp ground flax or 1 tbsp chia seeds (binds mixture better)&lt;/p&gt;
&lt;p&gt;1/4 tsp vanilla&lt;/p&gt;
&lt;p&gt;1/8 tsp pumpkin pie spice&lt;/p&gt;

&lt;p&gt;&lt;em&gt;My topping of choice&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1 Tbsp almond butter mixed with 3 Tbsp Greek plain yogurt and a drizzle of honey&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Directions&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1. Mash banana with a fork. Beat two eggs and combine with mashed banana. Add in any optional ingredients. Or use a food processor to combine all ingredients and once, process until smooth.&lt;/p&gt;
&lt;p&gt;2. Heat griddle over low heat, spray with a non-stick spray or coat with a little olive oil, then pour batter onto griddle in small circles (make sure the pancakes are smaller than the size of your palm or they will be really hard to flip). Flip after edges start to cook and allow the pancakes to cook through.&lt;/p&gt;

&lt;p&gt;Nutrition info for pancakes (not including chia or flax): 250 calories,  10 g fat (3 g sat fat), 14 g pro, 28 g carb, 3 g fiber.&lt;/p&gt;

&lt;p&gt;1) Pick a couple of ripe bananas. They should be sweet and soft but not too mushy.&lt;/p&gt;
&lt;p&gt;2) Peel the bananas and cut them into coins&lt;/p&gt;
&lt;p&gt;3) Freeze the banana pieces for at least an hour or two.&lt;/p&gt;
&lt;p&gt;4) Put the pieces into a food processor or blender.&lt;/p&gt;
&lt;p&gt;5) Blend on high. Initially they will look crumbly and piecemeal. The mixture will probably get stuck a lot. Keep scraping down the bowl. Suddenly, as you keep blending, you will see a change.&lt;/p&gt;
&lt;p&gt;6) The bananas turn creamy!&lt;/p&gt;
&lt;p&gt;7) (Optional) Now is the time to add a scoop of peanut butter, honey, or anything else you care to mix in.&lt;/p&gt;
&lt;p&gt;8) The ice cream will be the texture of soft-serve, but if you freeze again in an airtight container, it will get harder and more like regular ice cream.&lt;/p&gt;
